American Whiskey

American whiskey is a broad category that encompasses several distinct styles produced in the United States, including bourbon, rye whiskey, Tennessee whiskey, wheat whiskey, corn whiskey and American single malt. These styles are governed by US production regulations that cover aspects such as grain recipes, distillation limits, cask type and, in some cases, minimum maturation periods.

Whiskey is the broader category. Bourbon is one particular type of American whiskey with its own legal requirements. To qualify as bourbon, it must be produced in the United States from a grain recipe containing at least 51% corn, distilled to no more than 160 proof, entered into new charred oak containers at no more than 125 proof, and bottled at no less than 80 proof.

Bourbon is a style, not a region. While Kentucky is closely linked with bourbon and remains its most famous home, bourbon can legally be produced anywhere in the United States provided it meets the required standards of identity.

A whiskey must meet specific legal requirements to be labelled bourbon. It must be produced in the United States, use a mash bill of at least 51% corn, be distilled to no more than 160 proof, entered into new charred oak containers at no more than 125 proof, and bottled at 80 proof or above. If it is labelled straight bourbon, it must also be aged for at least two years, and if it is under four years old it must display an age statement.

Tennessee whiskey is typically produced to the same fundamental standards as bourbon, but includes an additional charcoal mellowing step linked to the Lincoln County Process. In Jack Daniel's case, the new spirit is slowly filtered through sugar maple charcoal before entering the barrel, which helps create its smoother character.

Straight bourbon means the whiskey has been aged for a minimum of two years and has not been blended with other spirits, colouring or flavouring. If the bottle does not display an age statement, it must be at least four years old. The term denotes a more precisely defined category rather than simply a superior or more premium bourbon.

Because US law requires it. Bourbon must be matured in new charred oak containers, which is one of the key reasons it develops such distinctive notes of vanilla, caramel, spice and oak. Once those barrels have been used for bourbon, they cannot be reused for bourbon production again, which is why ex-bourbon casks are widely sold to Scotch, Irish whiskey, rum and other spirits producers.

In bourbon country, hot summers, cold winters and changing humidity levels cause barrels to expand and contract more dramatically than they typically do in Scotland's cooler climate. This seasonal movement forces spirit in and out of the oak more aggressively, which tends to accelerate extraction from the wood and can help American whiskey develop colour and cask-driven flavour more rapidly.

Rye whiskey is another major American whiskey style, but rather than being built around corn it must be made from a mash bill containing at least 51% rye. In terms of flavour, bourbon often tends towards vanilla, caramel and sweetness, whilst rye is typically drier, spicier and more peppery, with more herbal or grain-driven character.

Jack Daniel's is labelled and marketed as Tennessee whiskey, not bourbon. It is frequently discussed alongside bourbon because it uses a largely similar mash bill and matures in new charred oak, but the key distinction is the charcoal mellowing process employed before maturation. This additional step is why the brand positions it as Tennessee whiskey in its own right.
